Brew Ratio: 1:16 - 1:18 (coffee to water)
Water Temp: Approximately 97 degrees
Grind: Filter
STEP 1:
Fold the filter paper, weigh and grind the coffee. Reweigh the coffee after grinding to ensure ground mass is accurate.

STEP 2:

Insert paper filter into the Chemix and pour hot water through the filter to rinse out that paper taste and to warm the Chemix. Dump the water
STEP 3:
Place the ground coffee in the filter and shake gently to level out the coffee.

STEP 4:

Give a gentle stir as soon as 10-15% of the water has contacted the coffee bed. This stir helps extraction of the coffee.
STEP 5:
Continue to pour water in several small stages in order to maintain a shallow slurry. Do not pour at the very edge of the filter as this can create uneven extraction.

STEP 6:
Give a gentle stir after the final pour. If done properly you should get flat or slightly domed coffee bed.
